Ingredientes

  • 6 tazas de harina
  • ¾ de taza de manteca de cerdo caliente (para la masa)
  • 3 huevos
  • ¼ de taza de azúcar (para la masa)
  • Sal, pimienta, orégano y comino al gusto
  • 1 ½ taza de agua tibia
  • 750 gramos de carne de res picada
  • ¾ de taza de manteca de cerdo caliente (para el relleno)
  • ½ taza de ají panca molido
  • 1 taza de cebolla picada en cuadraditos (brunoise)
  • 100 gramos de azúcar (para el relleno)
  • ¾ de taza de cebolla china picada (cebolleta o cebolla de verdeo)
  • 1 papa cocidas y cortadas en cuadraditos
  • ¼ de taza de perejil picado
  • 3 cucharadas de vinagre
  • 1 ½ cucharada de gelatina sin sabor
  • ¼ de taza de alverjas cocidas
  • 200 gramos de aceitunas negras
  • 150 gramos de pasas
  • 5 huevos duros

Preparación

Relleno

  1. En una olla verter la manteca con el ají panca molido y cocinar a fuego fuerte hasta que se separe el ají de la manteca
  2. Condimentar con sal, pimienta, orégano y comino a gusto, bajar el fuego al mínimo para que no se pegue la preparación
  3. Añadir la cebolla y cocinar por 5 minutos más
  4. Añadir la cebolla china picada
  5. Retirar del fuego y añadir azúcar, vinagre, perejil picado, las papas y las arvejas cocidas
  6. En otra olla diluir la gelatina con el agua, cocinar a fuego lento y una vez que empiece a hervir añadir la carne picada, mezclar y cocinar por 2 minutos
  7. Mezclar con los huevos duros trozados, las aceitunas y las pasas
  8. Refrigerar por una noche el relleno.

Masa:

Cernir la harina en una fuente grande y verter la manteca hirviendo, mezclar rápidamente con una cuchara de madera, dejar enfriar.

Añadir los huevos, el azúcar y el agua tibia con sal, amasar hasta lograr una masa firme, dejar reposar tapada por 10 minutos.

Pasados los 10 minutos formar bollos y adelgazarlos con ayuda de un rodillo hasta lograr formas circulares de medio centímetro de grosor y 14 centímetros de diámetro.

Armado

Colocar el relleno en el centro y cerrar, repetir la operación con las demás empanadas
Introducir en el horno y cocinar a fuego medio por 15 minutos

Secretos de las empanadas salteñas

Se puede suplir la carne de res con la de pollo o utilizar ambas. Se pueden pintar las salteñas con grasa de cerdo y ají panca molido antes de introducirlas al horno.
